The College of Agriculture / Department of Food Sciences at the University of Basra organized a seminar on studying the nutritional and therapeutic efficiency of Galactooligosaccharides produced by the enzyme-Galactosidaseβ extracted from local isolates of lactic acid bacteria.
The seminar, which was lectured by graduate student / PhD Maryam Jawad Abdul Latif and supervised by Professor Dr. Sarmed Ghazi Muhammad and Professor Dr. Wassan Kazim Abdul Razzaq, aimed to produce sugar from a safe and inexpensive food source (whey) using the partially purified enzyme beta-galactosidase extracted from local isolates of lactic acid bacteria and to study the nutritional and therapeutic efficiency of sugar.
The study found that the best concentration of sugar produced in laboratory animals led to a reduction in LDL cholesterol levels and an increase in HDL cholesterol levels.
