The Qurna College of Education at the University of Basra discussed the master’s thesis in the Department of Life Sciences by the student Beida Jabbar Nabet Al-Saad, entitled: Study of some chemotactic characteristics of red and white muscles in two hybrid Ross 308 chickens and local chickens.
The study aimed to determine the effect of histological and chemical characteristics on the meat quality of two hybrid chickens: Ross 308 and local chickens.
The study included calculating the numbers and diameters of muscle fibers, estimating the total protein concentration of four muscle areas, in addition to calculating the percentages of amino and fatty acids.
The study concluded with a set of results that showed that local chicken hybrids were characterized by a higher protein content and a better diversity of amino and fatty acids compared to Ross 308 broilers. These results indicate the nutritional and functional importance of local chicken meat as a healthy, high-quality source of animal protein.
