A master's thesis at the College of Agriculture at the University of Basrah examined the fortification of dairy products with oils extracted from fruit seeds as a source of omega acids.
The master's thesis submitted by researcher Anwar Abdul-Baqi Mahlahal showed the extraction of oil from the seeds of grapes, pomegranates, cherries and oranges, the study of its physicochemical and sensory properties, the estimation of its antioxidant effectiveness, the diagnosis and estimation of fatty acids using GC-MS technology, and the identification of the optimal oil for fortification in a dairy product (yogurt) to improve its nutritional value, rheological and sensory properties, and its stability during cold storage.
