University of Basrah Explores production of Cellulase Enzyme from Lactic Acid Bacteria
A master's thesis at the College of Agriculture at the University of Basrah investigated the possibility of producing cellulase from a local isolate of lactic acid bacteria and its application in food systems.
The study, presented by student Sabreen Abdullah Mansour, aimed to isolate and identify Lactobacillus bacteria from various sources and determine their efficiency in enzyme production. Results showed that the best isolate was from fish entrails and was identified using PCR. The enzyme was extracted and partially purified, then used to improve the extraction of essential oils from star anise and improve the sensory qualities of bread.
