Dr. Wael Ali Sawadi, Head of the Department of Food Science at the Faculty of Agriculture, University of Basra, chaired the defense committee of a master's thesis at the Faculty of Agriculture, Kufa University, entitled "Studying the effect of adding arak tree aqueous extracts on the qualitative characteristics of locally processed meat".
The thesis, submitted by master's student Labab Abdulhassan Mahdi, aimed to evaluate the effect of Arak root extract in improving the qualitative characteristics of processed meat, by reducing the activity of spoilage microorganisms, and prolonging the preservation period of the food product without affecting its quality.
