Master’s Thesis at the University of Basrah Examines the Effect of Protein–Polyphenol Interactions
The College of Agriculture at the University of Basrah examined a master’s thesis entitled “The Effect of Protein–Polyphenol Interactions on the Properties of White Corn Protein Concentrate and Its Applications in Beef Patties.”
The study, conducted by the researcher Ali Abdul-Hussein Abdullah, aimed to prepare a protein concentrate from white corn grains and modify it using phenolic compounds extracted from various plant by-products.
The research investigated the impact of this modification on functional properties and chemical indicators, in addition to improving the quality attributes of refrigerated beef patties.
The findings revealed the superiority of pomegranate extract in enhancing antioxidant activity and significantly improving functional properties.
