Master’s Thesis at the University of Basrah Explores Advanced Food Applications of Glucanotransferase Enzyme
A master’s thesis at the College of Agriculture, University of Basrah, investigated the purification and characterization of a glucanotransferase enzyme produced by a local bacterial isolate and its application in food systems.
The thesis, presented by researcher Huda Ali Abdulhussein, aimed to isolate and identify a highly efficient local bacterial strain capable of producing the enzyme and to utilize it to improve the quality of food products.
The study included the isolation and identification of bacterial strains, followed by the extraction, purification, and characterization of the enzyme and the evaluation of its application in laboratory-scale bread production.
The findings demonstrated a significant improvement in specific loaf volume, crust color, uniformity of shape, and texture, highlighting the enzyme’s promising potential for advancing food industries and enhancing the quality of baked products.
