PhD Thesis at Basrah University Explores Nutritional and Therapeutic Efficiency of Sugar
A PhD Thesis in the College of Agriculture at Basrah University explored the nutritional and therapeutic efficiency of the sugar Galactooligosaccharides produced using beta-galactosidase enzyme extracted from local isolates of lactic acid bacteria.
The dissertation, presented by PhD candidate Maryam Jawad Abdul Lateef, aims to produce sugar from a safe and affordable food source (whey) using partially purified beta-galactosidase enzyme extracted from local isolates of lactic acid bacteria, and to study the nutritional and therapeutic efficiency of the sugar.
The dissertation concluded that the optimal concentration of the sugar produced for experimental animals led to a decrease in LDL cholesterol levels and an increase in HDL cholesterol levels.
