Dr. Asaad Rahman Saeed, Dr. Haidar Ibrahim Ali and researcher Ghassan Faisal the academics at faculty of Agriculture, university of Basrah published A scientific chapter titled (Heating technology in milk pasteurization) in the book of modern technologies in the manufacture of milk, which was issued by apple academic press.
ziena tariq the academic at department of food science said that the chapter included information about history of pasteurization and pasteurization of milk and information on electricity and the design of pasteurized om and the effect of thermal heating in the physical, chemical and microbial properties of milk, in addition to it dealt with of the derivation of mathematical equations describing the kinetics of microbial killing and elimination of the base phosphatase enzyme and analysis of heat transfer in the heating system Om, the chapter included also the effect of temperature on the microbiological, chemical and sensory properties, and the effect of maternal heating on milk protein synthesis.
