Dr. Amira Kazem Nasser, A lecturer from University of Basrah, Faculty of Agriculture, head discussion committee of postgraduate (master student) within the Faculty of Agriculture at Al-Muthanna University. The thesis entitled (The softening effect by using Bromelainenzyme in some of the characteristics of aged laying eggs chicken meat) by the researcher Saad Kadhim Jabbar.
Nasser emphasized that the research achieved a significant improvement in the tenderness and freshness of treated meat through raising with the ability of water holding, dissolved collagen and protein nitrogen with raising rates of the sensory evaluation of processed meat.
